My intention was to write in this blog as often as I can. The truth is I hate to write and who has the time anymore. Therefore, I have decided to post recipes. In addition to my love for baking, I love to cook. I believe all my recipes are from God. God seems to slowly introduce the foods I miss and guides me to making delicious foods to be enjoyed by everyone.
These pancakes are better than any egg filled ones and a favorite in our home. Our children and their friends request these pancakes and it is fun to have breakfast for dinner!!!Enjoy!!!

2 cups flour
1/4 cup sugar
1 tsp baking soda
3 tbs oil (I use Canola oil)
3 tbs water
2 tsp baking powder
1 1/2 cups milk
Add flour, sugar and baking soda and stir in a large mixing bowl.
In a separate small bowl add oil, water and baking powder and stir until it bubbles- If it doesn't bubble your baking powder is old and inactive.
Add this to the flour mixture immediately and mix. Last add milk and mix.
This batter makes 10 nice size pancakes. I usually double the batter and freeze the left- overs. The pancakes freeze great and you just put it in the toaster and it tastes the same as if you just cooked them!
